I like turtles.
Ever since I learned you can fry plain, pre-cooked pork roast, it's been a dish I don't know if I can get tired of. Perfect with a glug of soy sauce and some garlic powder. The pork itself is easy to prepare in bulk too. I pretty much buy pork shoulders any time I see them on sale now.

Nice, seems versatile. I think it's the soy sauce and its disproportionate umami-imparting properties that really make a lot of dishes what they are.

I like that bulgogi recipe though, takes quite a lot less time to make than some of my other regular things, although I ignore the instructions and marinate it overnight because it tastes better that way

For sure. You need longer than the 30 minute minimum to get the full benefit. Like at least four hours.

I've discovered dry brining (i.e. just a coating of salt and herbs) is helpful for some meats though, less messy and still fulfills the same purpose.

i got an instant pot for xmas and have been using that a lot. mostly for chili really, i love chili. made some slamming chicken tikka masala too

Instant Pot is how I do all my pork now, speaking of. It's so good for batch cooking meats and soups/stews.

I did some homemade yogurt in it at one point, but because the internal sealing ring hangs onto odors and flavors, the yogurt had the most subtle but insurmountable taste of chicken broth. :(

Anyway, this is all to say that I watched the recent episode dump of Arrested Development on Netflix. It wasn't great.

I have a recipe for it actually, I also have the recipe for the dish it was originally based on before it was anglicised, some sort of butter chicken thing
I want to make a vindaloo sometime, normally those are incredibly hot so you can't really order them at restaurants unless you're prepared to risk getting incinerated

but there are some unusual flavours like vinegar in it, so I need to have a go at making it myself and I can just tone the heat down

iirc you have to marinate the meat twice though, it's a complex one

ctm is super easy to make though, you should go for it

mine tasted exactly like what you'd get in a restaurant ... garam masala is a wonderful thing

i guess the real test would be to make homemade garam masala, which i did not do

it's not really any different to what you buy
just a bit more flavour I guess because you tend only to grind it five minutes before you use it

i did make up my own cajun spice mix for chicken, pretty proud of that
the advantage of making it yourself is you can tweak it a bit I guess, if you like a bit more cinnamon or a bit more cloves or whatever you can make it so

I dunno, a lot of the things I tend to make take too damn long :/
a lot of the time I'll just fry up a small onion, broccoli, a bell pepper and some chorizo slices, then toss in half a jar of pesto and have it with some pasta
that's one of my standard things but it's a bit boring
