That's why I don't like the term realistic. Because that implies a relation to real life, which NO game ever has had, no matter what anyone says. But the word plausable is more open. It doesn't neccesarily mean real life, but it means things fit together in a way that makes sense.

I know where you're coming from, but plausable and realistic are two completely different adjectives.  Plausable means believable, or with the potential to be believable, and I have yet to see a video game that comes under either of these definitions.  Realistic means similar to reality, and I have yet to see a video game that comes under that definition.  You can have graphical styles under realistic, but I think plausable's the wrong word.

Anyway, I like excellent 2D graphics (Metal Slug 3 as an example, TLoZ: Four Swords Adventure as another) and 3D games that have good architecture instead of putting all the energy on textures (MP and Doom 3 are good examples, although the later has not been released yet). I don't like Halo's "Copy and paste" areas, and the fact that the textures are very good, but the areas are not very detailed.
And as for Cel-shading, I really like what they did in XIII, but I didn't like what they did in Wind Waker as much. It must have something to do with the design or something.
Cell Shading is a beautiful technique and I applaud Nintendo for using it in Windwaker. It made the game... stand out. The fact that it looks somewhat... shoddy at times is actually how they intented it to look. As far as Cell Shading engines go Windwaker's engine is amongst the best out there. What can I say, I just liked Windwaker's look the best of the whole game, the rest wasn't nearly as good as Ocarina of Time.
However, I am very thrilled with the decision they made for the successor to Windwaker. They decided to write up a whole new engine for it and it is looking mighty fine indeed.

So, how do I like my graphics? I don't know really. It's been said already by someone else... it all depends on the game itself really.

I don't think I would've liked Windwaker in any other way than it is. The Cell Shading worked for the whole setting of the game, the whole... feel of it.
But, on the other hand, I don't think I would like Gran Turismo 3 A-Spec any other way than it actually is. Completely realistic-looking.

It is in fact so that every look can be made or broken by the game itself. Breath of Fire: Dragonquarter for example would've been more appealing to me if it WASN'T Cell Shaded.

And old-school 2D side-scrolling engines can still work wonders. I really like Metroid: Zero Mission's look.

Has anyone noticed that more and more games are using cel-shading. It works in some games like Viewiful Joe and Tales of Symphonia but what is Killer 7. Its disturbing in screen shots and it gives me nightmares when moving, I guess some people would call it art.

Cell shading is cool when used properly, but pretty awful when used badly. And it's often being overused and used pointlessly.

Take that Mega Man X game. 7 or 8, I forget which one. Now, I never played it, but I've seen screenshots, and it looks awful. They just threw a black outline around a few characters and called it cell shaded. And they didn't even give everybody an outline. Awful awful awful.

As for Killer 7, it's got a highly styleized noir look, which I can appreciate, but that doesn't keep it from looking to totally stupid. The whole effect is kind of ruined when you see the bad guys EVAPORATE INTO A CLOUD OF BLOOD. That's not gritty, that's just trying too hard!
AFAIK it was Megaman X7 which was 3D Cel shaded.
Cel shading only works if you make EVERYTHING look cel shaded, and most games don't bother with that. The outline is enough for them to be happy.

Look at Jet Set Radio Future (still haven't found a better example), and its textures. Most everything has two-tone shading, contrast varying depending on the environment. Every texture on every wall looks like something a cartoonist would draw for an episode of Scooby Doo or something. Planks on walls all have darker outlines, windows are blue with nice looking, obviously hand drawn highlights, everything looks like someone drew it by hand. Which has been the point ever since the first cel-shaded game.

If someone puts black outlines around objects just because it sells, I officially hate them. And I know some companies do.

MMX7 definitely falls into that category. It looks awful.
For my Consoles (XBOX/GCN) I like nice detailed FPS-style graphics.
For Handhelds, I don't mind Final Fantasy Tactics Advacned/Fire Emblem style graphics.
