Oh... I dunno about the PC version lol. I think DaS II SOTFS had japanese and english text on PC. But I doubt you can download the game early on steam.

There's at least a few examples where they removed Japanese for western release but not the other way around (probably because English in Japan is more prevalent than Japanese outside Japan), and Souls voiceovers have always been English anyway.
So Japanese people who buy the game in Japanese still hear English voice acting?

Are you sure? I'm sure that I saw japanese voice actors listed in the credits for Bloodborne...

But maybe that game is just an unlikely exception.
Pretty sure Bloodborne is the first Souls with voiceovers other than English. It's got German too! I was never brave enough to switch though.

Oh god, when I got Dark SOuls on Steam it was in german and only DSfix allowed me to switch that shit around.

Those were some really terrible minutes in my life before I used DSfix.

I never bothered looking past DSfix, but is there actually no way to switch languages in the game itself? That's awful.

But maybe it's similar in Japanese and the English version is the outlier, no idea.
It seems like the non cursed version is suffixed with "(holy)". But maybe that's only in the japanese item list I just googled up so it may be the exact same name ingame.

Designed my character for DS2. 'Darius' is super sexy!  Warrior build, petrified thing for gift.  Can't wait to dive into this game tonight!

No. I did get some unsolicited warnings but they were helpful and vague enough so that I didn't know exactly what I was walking into.

So....how exactly does one do a standing riposte?  When I parry, I try to riposte and it just does a regular attack.  The wiki says to do the ground riposte instead because the standing riposte is too tricky, but it doesn't even attempt to tell you HOW to do the standing riposte.

I'm honestly not sure anyone knows! I can't parry reliably enough in 2 to even think about puling one off.
LOL that's so weird that it's so mysterious. 

I'm not having problems parrying so far.  I did use the kick move often in DS to get enemies to lower their shields, but in DS2 it is replaced by a guard break move. It's not always easy to push forward and R1 at exactly the same time, but I'm sure it will get easier with practice.  I read that you can follow the guard break move with a standing riposte, but again there is no telling of HOW to do the standing riposte.

Pretty sure no one but PvP minmaxers cares about standing ripostes. The difference is tiny and parrying is niche in PvE to begin with.
I was using wikia.  I'll try wikidot.

I read that there is no invincibility during the riposte animation, so I though standing would be advantageous because it's faster.

Also, enemies don't respawn when you rest at bonfire but they do if you die.  Is there some kind of penalty if you die over and over to reset enemies?  I'm just practicing on guys in the tutorial and I have no idea if I'm screwing myself somehow by dying so much.

Gosh, wikidot isn't much better.  It just adds that the timing is difficult but doesn't attempt to describe the precise moment to strike beyond saying that it's while they're falling.  It sounds like it's not something anyone cares about anyways.
I'm sure there's some slowmotion YT video that shows windows, but it's not really something to be concerned about.

Enemies absolutely respawn when you rest. You might've taken some special nonrespawning enemies as the rule. There's no such penalty. Enemies eventually stop spawning if you kill them enough (usually 8+ times), but you can get infinitely respawning enemies by joining the Champions Covenant in Majula, though that also makes enemies generally stronger. It's good to use if you want to farm something and then you can leave the covenant when you're going back to progressing.
I could have sworn that they don't respawn when I was resting, so I've been killing myself to make them respawn.  I just lost 7500 souls by accidentally falling before I recovered my souls, and they took me over an hour to get, and now I hear I didn't need to kill myself at all.  SHIT
