They ought to make you hold a button to walk instead of run.  Run should be the default.  Maybe not in souls because stamina is used for other things, but other games

It's not really something you remember later even if you've encountered it, which is why I can't think of much to back up my bold claim lol. The most extreme example would be Shantae 1 to Shantae 2, which just flipped it around because you don't ever want to walk. You'll probably find it more prevalent in games with some sort of stealth elements.
Yeah I can think of a couple of games where you could sneak.  I guess that's like walking.
If the option to run isn't there then it's different, less frustrating.  But any game that lets me run offers a contrast between running and walking, and once I see the difference I never want to walk again.  It's like they need to let me run all the time or not at all.
Here's my normal souls boss fight style:

I guess I can't think of significant stretches where running constantly would feel beneficial in a blind playthrough of a Souls game, unless you just run past and way from all the enemies. There's obstacles every 5 seconds otherwise so it doesn't really come into play.
Just set that gif to 10x speed and refer to it if you want to know how to beat a Bloodborne boss.
Well obviously I have to stop running when I fight, but there's plenty of places where there aren't enemies every five seconds. 
Doesn't the absence of enemies make you feel too apprehensive and busy moving your camera around constantly looking for secrets and traps? Maybe I'm just underestimating the need for speed.
Like I'll run through an area where there's no enemies, then when I see enemies I run straight for them and usually open up the fight with a running jump attack, then strafe and use stamina for dodging, blocking, attacking, then run some more after they're dead. 
If it's a new area that I haven't explored well, or enemies that I'm not familiar with then I'm definitely going to go slower.

There was definitely a point in the game where I didn't need to be super cautious any more.  The need to run wasn't strong in the beginning.  I'd say the first 1/3 of the game was pretty tense.
Well that's just normal lol. When you bring up something like ADD I assume you run to the point of it being detrimental to your ability to progress, like sprinting through Sen's Fortress blindly.

Oh, it doesn't even have other languages? I just generally need the physical copy to uninstall patches if needed. I have no problem with waiting longer, I just hate having to dodge spoilers.
