aw jeez - my fire lady in firelink shrine is dead already and I haven't rung the second bell.
Yeah, apparently she gets killed if you either ring both bells or collect the Firekeeper Souls in Undead Parish and Blighttown. Your character is way ahead of the curve though, so I wouldn't worry about not being able to upgrade flasks for a couple bosses.
You probably shouldn't be backtracking that much, though.
I only went back to firelink shrine because I ended up in Valley of the Drakes and explored a little, then next thing I know I was in Firelink.  Glad I went because now I have Pyromancy. 
Pyromancy is a unique magic type in that it only scales with the upgrades to the Pyromancy Flame you equip, so you don't need to invest in INT/FTH to get good results. It's a good support tool for a melee-centric character along with a bow, but the upgrades do get extremely expensive, and they don't matter for non-direct damage spells like Power Within.
I only have one miracle and I would need to level up fai 5 more times to use it  :(

Which miracle is it? Miracles are mostly heals and short-lived support spells and pretty bad offensively. Even on a first playthrough I wouldn't say it's worth the investment, Estus and humanity are generally all the healing you need.

I'm not sure what it is, I'll have to look next time I'm playing.  I love that forest beyond the crest of astorias seal.  There's tons of totally fun enemies in there, and lots of souls to farm.  I went in as far as I could and I quit when I was looking down on what looks like the hydra.  I think I should probably leave and come back later?
At the end of the left side of that forest is a major boss you can fight right now. Your level is more than high enough, but you'll probably want at least a +10 weapon. The leeches in Blighttown are great for farming large titanite shards.
Also if you haven't found it yet, attack the walls to the left of the Artorias Crest door to remove an illusory wall that hides a bonfire.
ALSO halfway to the boss is a small ruined structure with a bridge that has a cat creature sitting in the window. If you talk to her and join her covenant, the guys in the forest stop attacking you, which makes running back to the boss after dying a lot easier. Just make sure not to answer "no" to her first question, otherwise she will refuse to talk to you until you have Oswald absolve your sins.

That place is where I planned to check out on my back.  I saw the path going down there.  If the enemies stop attacking, can you still kill them?  I really like the souls.

No, the butterfly is to the right before the Crest door. If you stay on the right after the Crest door, you eventually get to where you saw the Hydra, if you stay on the left after the Crest door, you reach the cat and eventually the other boss.

If you attack them while in the covenant, it'll break the covenant and they will become hostile again until you get absolution and rejoin the covenant. You can just wait to join until you're done farming and want to go after the boss, the covenant itself is for PvP and doesn't offer you much other than making the NPCs friendly and a vendor with some weapons.

A special note about Strength is that technically you don't need to go over 27 since two handing a weapon gives a bonus to Strength which at 27 effectively gives you 40 Strength which is where it caps out as far as giving you a damage bonus. So after you get to 27 anything you add isn't really important unless you found a weapon you like and want to one hand it.

You can level Dex up to 40 if your preferred scales with it, otherwise getting END to 40 would be my priority, then VIT. I'd still encourage you to hit 15 in INT to a couple nice utility Sorceries going but you can pass on that if you want, it's not vital. Faith isn't particularly useful unless you're building to use Miracles from the start and really pumping that stat, never got much use out of them. Extra heals are nice, I guess.

Really, at this point what you want to do stat wise will depend largely on what you feel like doing. END and VIT are both important, and in that order in my opinion, 40 END will give you a nice chunk of Stamina with which to dodge or shield tank as well as boosting your max equip load. If you're pushing 30 VIT you're well ahead of where I usually am for quite a while, my first character was at 25 at endgame, but level it if you feel like you need more HP.

If you have a weapon or weapon type you like, see how you can maximize your damage. If it's a weapon that scales decently with STR and DEX, like a C/C or C/B, consider leveling your DEX once you're comfortable with where your VIT and END are at the moment. If it's more focused on STR, usually just a B or A scaling with nothing or a D in DEX, you might want to bump STR up to 40 anyway if you just feel better one handing a weapon.

Get Attunement up to get another spell slot if you find you like Pyromancy, then invest in your Pryo Flame and some spells. Pyromancy can be very powerful but spells often have very few casts available. It's a nice option to have in any case.

There is a Sorcery Catalyst available from the NPC trapped in a Gold Golem as part of the DLC chain that is very good for lower INT characters if you want to keep using sorcery to buff your weapon and cast some other utility spells, you can even take INT up to 25 eventually if you want the best sorcery buff, but you might not use it often enough for that to be worth your investment. If you're hoping to sling Soul Arrows around though you'll probably just want to make a second character and build for that specifically. As it is Pyromancy and a bow will be better for you as a ranged option unless you go all in on INT.

Normal leveling for me is to hit the stats for the weapon I want, then work END and VIT until I feel good about them, then INT and  ATT for my weapon buffs, then working toward 27 STR and 40 DEX while bumping END when I feel like I need more stamina, capping at 40 before boosting VIT up to whatever I feel like.

Keeping in mind I like the extra Equip Load because FASHION SOULS BEST SOULS. HP might matter more to yall.

Actually don't check the Blighttown tree before you can fast travel.
