I don't know if anyone else has found this yet, but I didn't see it on the main site so I'll post it anyway:

If you climb all the way to the top of the ladder on the right, Serris can't hit you at all. I found this useful on my 1% run.

EDIT: Crap... There's one attack he can hit you with but he rarely does it, and he's usually dead by then.
