I don't know if it's easy as that, arcade-y flight games just aren't the sort of games you spend hours on at a time, there's only so much you can do with it. I love 64 to death but it really is about as long as you can make a game like that, you could extend some levels but that's not going to add a couple hours to the game and if it did it'd probably get tedious. Honestly if the problem with a series is that the games would be too short for the current market the answer is probably to just let it sit not shoehorn in ways to make it "acceptable". Downloadable might be the way to go actually, but Nintendo's terrified of the internet so there's no chance.
Alternatively, Star Fox Super Star: 8 Games on 1 Disc!
