Well, there're tonnes of normal sequence breaks in Zero Mission and Super; Prime has tonnes of SBing too, but a lot involve secret world travel.
If you're into Super, then I'd recommend the early Super Missiles, as it opens the game very early on. Other than that, go for Zero Mission, as that's also very open.
Pick your favourite, and start with that, rather than going for what's 'easy'.
Space Jump First is a good one to start with in Prime, and from there you can get things like early missiles, the morph ball without fighting the beetles, and have a quick Flaahgra fight.
Early PB in Phendrana's edge (and then plasma, x-ray, more PBs) can be done in all versions (except maybe Wii, I dunno) and is so easy even I could do it.

I would recommend trying to start off with your favourite (Metroid) game. What is most important to have when SBing are time and patience, because SBing is all about trying and trying and trying until you can pull a trick/SB off. Back then it had taken me hours just to get the button combination for SJF right.

No, Echoes uses SWs a lot but in Prime you can do all the good ones without even knowing SWs exist. All you really need is Space Jump to get things rolling.
If you want to get into sequence breaking I definitely recommend you start with Prime, if only because I like that one the best and SJF is awesome. It's also the one I started with and we've still got a few people who can give pointers if the site isn't as helpful as you'd like.
Super would probably be the best second choice, since you want to give Prime a rest. Mockballing might take a good amount of practice, like Prime the main site should be very helpful for at least the more basic things and the forum is actually probably more of a help for this game than Prime, so getting started would be pretty easy.

the quick flaahgra fight is not easy, and neither is sjf if you're a beginner. but sjf is still the best place to start because it's more or less required for most of the easier tricks in the game. getting missiles early is very easy (just l jump to the expansion in the main plaza half pipe), and bomb jumping over the runic gate in arboretum isn't too bad either.
The quick Flaahgra fight may not be easy, but you can do just part of it if it's too difficult. I've always found the side on the right as you walk in to be the easiest to get to, so you could do the first three with panels and the last without.

Exactly, most of the "sequence breaks" in Zero Mission are no more than alternate routes. Maybe early Varfia counts, possibly varialess DBJing to SA in Norfair just because you go through some heated rooms to get it. If you get especially ambitious, you can skip the ziplines in Kraid before entering Norfair.
My favorite SB for prime 2 is early PB right after you get SJ. Check youtube or search the forum for that one. It involves a ghetto jump to a secret world in temple assembly site. There's also various early missile expansions and stuff listed on the main site that are fun. Some are easy and some are harder.
OK well I'm currently during a run of MP2, so are there any easy early items for that?
This is the worst choice. :( There is this, though. You've likely passed it but it gets you missiles and an energy tank pretty much right off the bat. It's a pain in the ass though, I've only managed it a couple times and like everything in Echoes it's not as satisfying as you'd think it would once you do it.
